Some Of My Favourite Yummy Malaysian Food... right at home...

Work has put me thru a very high level of stress lately, so please, I hope you don't mind that I am going to show you a whole lot of my delicious food now. My brother planned his daughter's 1st birthday party last Sunday. Since his apartment is too small to fit in 10 tonnes of food and guests, we had it at my house (umm, I mean, parent's).
There was excitement. First child. My first NIECE (I have 2 monsterous nephews). I can see that my brother and sis in law was so excited about this special event. Even my parents were excited. He ordered some Malay kuih muih (delicacies), and bought drinks, fruits, and more.
His friend brought some really delicious potato curry puffs. This was really good, I tell you! The pastry is very tender, yet crispy. The curried potato filling was warm, soft, with a hint of pepper. It was yummy. Lisa (sis in law) made some dessert. No matter how busy she was with work and her pregnancy, she managed to make a special Chilled Prune Pudding. I never knew prunes would taste so good in desserts! And this obviously finished very early on the party. I regretted not eating more of it before the larger crowd arrived! :-)A family friend came, and surprised us with some Malay kuih as well. This yummy browned balls are called Cucur Badak (umm, direct translation: cucur: fritters, badak: hippo). This has got to be one of my favourite, favouuurriitee traditional Malay delicacy, breakfast or tea time. It's made from mashed sweet potatoes, and, in the middle of the balls, a spoonful of semi spicy fresh grated coconut & shrimp filling. This filling is fried with some chilli and turmeric, which makes it taste so good. The balls are deep fried till crispy on the skin, usually to a very brown colour like in the picture. You have got to try some of these if you're in Malaysia! This is Cucur Keria, another famous Malay delicacies. Honestly, there is no translation for this. But, I would call it the Malay donut. It certainly is the right donut shape! Cucur keria is made from sweet potatoes, mashed, added with some flour and fried, and coated with some sugar. Hmm, just like the sugary donuts! This was also brought to my house from a friend. How nice... We're always grateful to receive food!My mum, being the good cook she always is, could not just sit and receive food - she HAD to make some of her own too. We helped around in the kitchen, and we managed to make a really huge portion of fried bee hoon and fried mee. Malaysian parties is just not complete without this fried dish. It's just so good to eat it at parties, picnics, anywhere, anytime! I enjoy sprinkling those freshly chopped scallions, red chilli, fried tofu, and fried shallots. Yumm! This is one more which mum cooked - pulut kunyit (sticky rice with turmeric). The sticky rice is placed in some water, with a bit if turmeric powder, and about 1 tablespoon of whole black pepper. It is then steamed with daun pandan (screwpine leaf) for about 20 minutes, added fresh cocout milk and mixed well using a wooden spoon. The taste?? So delicious you will crave for more. Eat this with come beef or chicken curry. We also had beef rendang that mum made the day before! Mmm, string crepes or lacey pancakes, whatever you call it, in Malay it is popularly known as Roti Jala (Net bread, net as in the fishing net). My brother ordered this, alongwith some chicken curry. I did not really like the chicken curry, as it was too rich in coconut milk... but these roti jala were wonderful. I should write about this one day when my mum cooks this. Would be a shame to not learn how to make these!
These are made from plain wheat flour, blended in some water, santan and eggs. The yellow colour comes from a little bit of turmeric powder. And these are Kuih Talam, another one of my favoutite Malay delicacies which is sold in many many Malay stalls and restaurants. The green and white toppings tastes of Santan (coconut milk), with the green being the colour from the daun pandan. The yellow is made from tapioca.
So I have really been drooling over food and now I am hungry, after writing about all the yummilicious delicacies...

Guess what I did as my contribution to the party? I insisted on buying the birthday cake. Yup, this cute Tweety cake, with Black Forest underneath those creams and drawings. I are not bake a cake, not this special day. This is really nice, and my niece loved it - It's Tweety! Her favourite.
Birthday Tweety Bird
We cut Tweety into pieces to share with the guests. I think I ate the legs... I wonder who got the eyes... But for sure, the cake tasted really good, and I should say - very well done. I ordered this from a bakery in Tanjung Bungah. If you are around Penang, you might like to try this. It is just on the way to Batu Feringhi. They have various types of ready made cakes, or you can customize your cake from them. The Black Forest cost me RM58 for 1kg, and the drawing an additional RM10.00. Expensive? Not really, but it was worth every cent paid.

Steak N' Mushroom Ginger Stir Fry

Steak. Mighty. Meaty.
Mushrooms. Crunchy. Deliciouss.

Two of these combined, makes almost everyone's favourite dish. Before you wonder why my photos are so out of ''white balance', wonder no more. I swear it looked perfect in my Photoshop. Seriously. After posting it on Blogger, it all turns out of colour and whateva balance it's supposed to. Anyways. Let's talk FOOD!

Honestly, I prefer chicken. Higher protein count as compared with beef and not to mention beef is usually not my choice of meat. But sometimes, like today, beef - the fresh, deep red coloured piece of meat looks so good, I just went on day dreaming of me having a recipe in my mind: sliced beef, marinated in some yummy marinade, with lots of onions to sweeten it, some of my favourite vegetables like mushrooms...

So I got a little excited to make some simple stir fry beef steaks with mushrooms. :-) Normally, I like to marinate the meat at least one day ahead. I just like the meat to get acquainted with the marinade, mix around, blend in, seal those flavours in the meat, and taste real good. But if I can't wait - 10 minutes will do justice. Afterall, marinade can be poured or brushed or sprinkled on the meat during cooking.
I made this as a single-serving portion for lunch.

:: Recipe ::

Ingredients
500gm beef steak, sliced thinly about 1cm.
1/4 big green onion, quartered
10 fresh Swiss button mushrooms, halved
1/2 yellow bell pepper, cut to squares
1 tablespoon Olive oil, for frying

For marinade:
McCormick's steak seasoning
HP Brown Sauce
Fresh ground black pepper
1cm freshly grated ginger
In a small food container, marinate the beef by sprinkling some of the steak seasoning. Add about 1 tablespoon of HP brown sauce and add a few dashes of freshly grounded black pepper, as you would like. Combine the beef and marinade by closing the container, while shaking it vigorously. Keep refrigerated overnight. Or if you're hungry already, 10 minutes shall do the trick :-)

Heat up a medium frying pan. Add olive oil to the meat, combine. By doing this, you reduce the oiliness while frying the meat - just minimal oil is needed, as compared to poring the oil directly on to the pan. When the pan is hot, place pieces of the meat on the pan to cook. Scatter the green onions over the meat. Turn the meat to cook, about 2 minutes each side, or longer if you like. When it is about half cooked, scatter the yellow bell pepper and mushrooms.

Smell it. Get hungry. Bring your serving plate to standby. Now, stir fry the meat and veges and cook till mushroom is done, in my case, I like them white and crunchy, just a little soft.
Enjoy this for lunch or dinner. Be sure to cook extra to share! I saved the mushroom for the last - And they taste good in the meaty gravy. It is amazing what juicy, sweet flavours meats can add to vegetables, and vice versa. Always cook them together for a lovely flavour!

Sizzling Wanton Noodles with Black Pepper Chicken

Do you remember when was the last time you ate at the food court and had one of those sizzling hot plate noodles in thick dark gravy? Well here it is! A home made similar version to get that tummy happy. I love sizzling hot plate dishes, but they are usually too salty and plain. However, this one is perrrfect!

The whole thing was cooked by my mum - while I was at work on Friday. I was quite stuffed the time I saw this and thought - maybe just a couple of bites... But it was GOOD! Mum never made this before - so I was really surprised on how tasty it was for a first! Only thing is, we dont have the hot plates. But that doesn't matter!

There was just plenty of vegetables, chicken, mushroom and, whoa! - fried wantons?!!! That was a surprise. I just loved it so much I finished the entire big plate. (Whooopssss! wasn't I on a ''no meals after 8pm thingy"???)

The gravy was prepared in advance, with some dark soy sauce, lots of black pepper, onions, garlic, ginger, mushrooms, and the chicken pieces. And I am very sure my mum must of not mentioned other type of ingredients being thrown into that yummy gravy of hers.

The fresh wanton noodles are blanched in hot water for a minute. And then, the noodles are combined in the gravy along with the veges to re-cook.

I love to garnish my noodles with a mix of chopped scallions, chinese parsley, and coriander. To make it all perfect - fried shallots too! Oh, and served with freshly cut chilis in lemon-soya sauce. ;-)

Want some? Sure wish I could send some over via email!

Mango Jelly with Custard & Fruit Cocktail

My favourite homemade dessert has got to be this one. Jelly, with fruit cocktail and a very generous layer of sweet, creamy custard. Eversince the first time I made them - until today, I never fail to get bored of this one. Cool days or hot. Day or night. Thunderstorm or earthquake. Because jelly and custard just melts in your mouth, all throughout your body. (Hmm, might be the reason why my belly is such a jelly??? :-o ) and just when you get too melted by the jelly, the fruity cocktail awakens your senses to a whole new fresh indulgence. Ooh yeah baby!

Ok ok, that was a little too much. It ain't tiramisu for starters!

Anyways.

Truth is, that this is the only dessert I'm so good at making. Baking makes me too nervous sometimes. But I am determined to pass the baker's test. Meanwhile, anything as simple as jelly custard will do. Plus point - Everyone in my house LOVES my dessert, and sometimes they even say ''Thank You'' by just leaving just a spoonful for me. That shows that... they wanted to take that last piece of deliciousness, but then it just suddenly struck their mind that hey - we forgot to leave some for HER.

I would be lucky to even grab that last piece of bite. ''Hey, they love my dessert!! Yaay!!'' That thought just puts a smile on my face. :-)

I only know of one nice yummy custard - Bird's Custard, trusted for generations. Fruit cocktails are everywhere in supermarket shelves - I love the one with pineapple, nata de coco, honey dew, and the other - the canned of peaches in syrup. And for jelly - I like strawberry or raspberry flavoured ones. This time, however, I was tempted to give mango a try. Other ingredients that you need is milk, sugar, and hot water. Sounds simple? Oh yeah!Yikes! I just hate photoshopping my photos sometimes. See the colour?? It's supposed to be creamy yellow and not pale yellow. But I'm too lazy to do it again, afterall, in my mind - custard's yellowish anyways. Or maybe I need to perform colour calibration for my dear notebook. Argh!

First of all, prepare the custard before you do anything else. 2 tablespoonfuls of custard, mix with about 1 heaped tablespoonful of icing sugar (normal sugar will do, but I love icing - soft and silky!) and add 1/3 cup of milk in, and stir. Place about 500ml of milk (I used low fat cos that was what I had at home) and bring to almost boiling point. Check the heat - it has to be low heat so custard cooks slowly, but nicely. Then add the custard mixture, and stir continuously until texture is thickened. It should be thick and creamy. Not lumpy with lumps of undissolved custard.

Turn the heat off, and transfer custard into a medium serving glass bowl. Layer some fruit cocktail on to the custard and refrigerate. It takes about 30 minutes to cool the custard, so meanwhile it is being cooled, go read a book - or sleep.. and come back later! For the jelly, just follow the instruction on preparing the jelly, and pour on top of the layer of fruits. Pour slowly, so you wont break lose the soft custard. Now put it back in the refrigerator and let it cool down for about an hour.

Now here you have it - 3 wonderful layers of dessert in one bowl. Remember to share it with your family. :-)

Kuih Bakul (Nian Gao) Fritters

Long after the festive Lunar year, when most cakes, cookies and delicacies are long gone, somehow one still remained - perfectly sticky yummy kuih bakul. And making kuih bakul fritters at this time of the year - mmph, what could be better?!

Be it potato fritters, banana fritters - these yummy, golden snacks are wonderful to eat for evening snacks. They have that ''lazy evening'' feel - so crispy on the outside but yet, so soft and sticky in the inside. Perfect to chew and much away with coffee or tea, while hanging out with your family and friends, or watching tv.

Kuih bakul is made from glutinous flour and sugar, and steamed in a rattan casing, wrapped in banana leaf, and steamed for up to 12 hours. I think gula melaka (palm sugar) is used in it, which brings the colour to a lovely glossy brown colour. More recently, I started to see kuih bakul being sold in plastic cups, like those jellies. It makes it last longer I suppose?

To fry kuih bakul, you would need some batter mixture, cut the kuih bakul into 1cm thick slices, cover it in the batter generously, and deep fry in very hot frying oil. Yummy. Now I am hungry!

Wanton Chicken Soup for the Soul

:: Wanton Chicken Soup ::
Serves 2

For wanton
1 big chicken breast
5 small prawns
1 water chestnut, finely chopped
20 piece of wanton skin
1 pinch salt and pepper
1 tablespoon corn flour

Mince chicken and prawns until fine. Add in water chestnuts. Mix well. Add salt and pepper. Combine with the corn flour - this will bind the meat nice and smooth. Take 1 tablespoonful of mixture and place in middle of wanton skin. Fold the skin to a ''bag'' and press the joint. Put aside and repeat with remaining.

For Chicken Soup
1/2 a chicken - take the boney parts
1/3 cup Pickled Chinese cabbage
1 teaspoon white pepper
1 teaspoon salt

Fill up a medium pot with water and heat up. When water comes close to boil, add the chicken bones, and let it continue to boil over medium heat for 30 minutes. Add salt, pepper, and pickled cabbage in. Stir, and let boil for another 20 minutes. Note: You can add 1/2 a cube of chicken stock if you feel the soup needs more chickenyy taste :-)

For chili-soy dipping

Cut some fresh green chilis, for very spicy chilis use birds eye chilis. Pour some light soya sauce into a small little bowl. Squeeze 1 tablespoon of fresh lime juice and add in chilis.

Now that everything is cooked, all you need to do is get ready 2 bowls. Place equal amount of wantons in each bowl, and pour the chicken soup on it. In addition to this, we also have some Chinese Kailan too. Just blanch them in hot water for a while, and add to your bowl of soup.

Garnish with chopped scallions, coriander and, of course, yummy fried shallots.

Serve warm on a cold night for that comforting feeling...

Chicken Pepper & Teriyaki with Fried Veges

The sweet honey taste combined with soya sauce and pepper is very, very delicious. Well, at least to me. I simply love anything Teriyaki-flavoured, especially fish and chicken. I may not use such pure teriyaki sauce here, but the ready made sauces are widely available - just select one and they taste good. I used Masterfoods' Teriyaki marinade this time around.

I made this for my lunch bento. Sometimes, I start work late, so I love to prepare some food for lunch. I get bored of the food near my office, so, sometimes home-cooked food is like heaven! Plus, it is healthier...

The preparation is very simple and it takes 30 minutes to cook this.

:: Chicken Pepper & Teriyaki ::
2 chicken breast fillets (I tenderise it a little...)
2 tablespoon teriyaki sauce
a few dashes of fresh grounded black pepper

Combine chicken and teriyaki sauce in a ziplock bag. Shake it vigorously (just don't tear it). This will really combine and cover up every single part of the chicken. Refrigerate overnight. And this - will let the sauce seep in the meat thoroughly..and thus become so delicious when you cook it...

Heat up a small pan (better if you have a griller) and fry the chicken with some olive oil, and flip the chicken to the other side to cook as well. Fry (or grill) until cooked. Sprinkle the black pepper as you cook on each side.

PS: Mine was simply fried on each side till cooked. The one in picture looks like it has some gravy, cos I like my chicken to have some. It's just the extra sauce and chicken juice after frying... yummy!

:: Stir fry Broccoli & Carrots with Oyster Sauce ::
1/2 broccoli, cut to small florets
1 small carrot, cut to 1-inch and again, to 4 pieces vertically (your call!)
1 tablespoon oyster sauce
a dash of salt and pepper
1/4 green onion, chopped
1 garlic, chopped

Simply stir fry the garlic and onion in some heated oil. Add veges, sauce and fry until vege softens. Then add salt and pepper to taste.

Early Dinner at Chili's Grill & Bar, Gurney Plaza

Put my love for varieties in food, I have a man who loves Citrus Fire Chicken & Prawns. Chili's, McD's, anything very-the-chicken is his favourite. So you see I often have these type of food here... To celebrate our little ''farewell'' before he flies off to LA for a few weeks of work - we decided to have a nice dinner at Chili's Grill & Bar. I miss him already :-( and it has only been 2 days!!! I can't wait for him to comeback!
The first time I ate Chili's was at BSC, and oh my, I loved the food - it's really good. I wondered, back then, why they had not opened one in Penang. Until about a year ago, I saw that red chili signature printed on this renovated shoplot - wow. Chili's is finally coming to Penang! We waited and waited, they kept delaying the opening, and finally opened. - You can hardly get to be seated!
The food was initially not as good as I expected - like the one in KL and so I decided to not go there... but against all odds, I still go there sometimes and normally order the Triple Play. This time, however - reassured me that the food and service has tremendously improved since its establishment in Gurney Plaza. :-) I really enjoyed the dining this time.Dining here would not be excellent without Dip dip dip... I get quite stuffed by just eating this - while waiting for my food to come. But tostadas are just a basket of tostadas chips and tomato salsa. So addictive - once you start, you just can't stop! Normally, we would be asking for a refill o this, but not tonight!I decided to try something new - their Chicken Crispers. Big strips of hand battered chicken meat in a crispy batter. This is good. I love it... I didn't really like the honey mustard sauce that it came with.. I wish they had given an option of what dipping sauce you want - and I'd choose either BBQ or Sweet N' Sour... (Just like McD's hehe..). The chicken came with 2 side dishes - home style fried fries, and a lovely golden yellow corn. Yumm... No thanks to the tostadas chips - I could not finish my meal! So I had it packed for home. Neva eva waste food!It was not only the tostadas that made me full - It was this. My Vanilla Coke with unlimited refills. I kept sipping and sipping between my chips... it just felt so good! Somehow Heinz's Chili Sauce taste distinctively different from other brands of chili sauce. Guess what I normally do with my chili sauce?? - I sprinkle black pepper over it. Lots of it, actually. I just like it that way.. especially when eating my chips! Mmmphh. The guy's favourite - Citrus Fire Chicken & Prawns. Not that he squeezed that piece of lime that it came with to make it all citrusieee... I kinda like this one too, the rice taste good. In fact, today it tasted really good than other days! I did not quite like the veges in this one - i guess they are just plain... broccoli, cauliflower, carrots and tomatoes. I think they are probably frozen ones or steamed, but either... I guess I like other veges better!
As we ended our main meals, we just wanted to sit longer and have a dessert. So he asked me if I wanted to share, cos he won't be able to finish it. "Sure, why not?!" and so we ordered the Chocolate Nut Pie with Vanilla Ice Cream, and Chocolate Fudge, toppled with a piece of Maraschino Cherry. This was a lovely yummilicious dessert! I took smaller bites till, I suddenly heard him asking "I finish it ok?" and realised that he had devoured so much more of our half n' half portion! "Hmm, and you were saying... that you could not finish it??" He he he... I love him regardless.
The Molten Chocolate Cake with ice cream is heavenly too, but toooooo sweet for my taste. Scared of the high level of sugar it contained, we just decided to not order that..

So that's it, I enjoyed my dinner at Chili's this time! :-)

The Best Sambal Belacan Recipe

What type of sambal do you like best? What do you think is they key ingredient for the fiery-kick tasty sambal?

And preparing sambal traditionally - with a mortar - what's the difference if you use a food processor machine?

Or do you even like sambal... I know some people don't! But if you're truly Malaysian... No matter what your background is, sambal's the favourite!!

Originated from the Malay circle of food - one cannot eat rice without a touch of chili. So comes the various preparation of spicy condiments in the Malay food. My god mother simply have no appetite to eat rice, if there is no chili! - As she says, even fresh bird's eye chili will do.

I have a friend who makes sambal kicap - lots of extremely fiery green chili padi, blended and cooked in sweet dark soya sauce. It is nice, bu seriously - too spicy for my stomach.

And comes to my mother's version of Sambal Belacan...

The key ingredient to my mother's Sambal Belacan is the belacan (shrimp paste). Choose one that is slightly "fair" and smells good. Never buy those that are very dark and smells a bit too... oh how do I explain this, when belacan basically smells almost the same... anyway, as long as you have it, here is what you need to do with it - you just need a small little portion, about 1 tablespoon of belacan, and lightly toast it on fire till it is aromatic.

And lemon - juice up 2-3 small lime and add in the sambal after preparing it, and stir. This adds the fresh zest to the sambal.

:: Ingredients ::
3 big red chili, break to 3 pieces
1 big green chili, break to 3 pieces
10 cili padi
1 tablespoon toasted belacan
juice of 3 lime
1 teaspoon salt
1 teaspoon sugar

With a stone mortar, start pounding the chilis hard - crush and crush them. Be careful not to let the juice get to your eyes - you might not stop crying... As the chilis mash up, add the belacan and pound it. Add a little bit of water if it is too dry, to ease the pounding. Once you get a ''gravy'' sorta texture, stop, add the lemon juice in, combine.

Transfer to a small bowl, and serve with rice, fried fish, fish curry, or any other dish such as fried rice, and noodles.

His Favourite Hainan Chicken Rice At Cosy Corner, Ampang Park Mall

Cosy Corner is very cosy in deed, located in a corner of the Ampang Park Mall along Jalan Ampang, KL. Apparently a favourite to many people, including my sister and my guy. Each time I go there, it is surely a full house, but the staffs are very quick to get you seated.

We love to seat by their booth seats and enjoy the view of the place - looking at various people and especially the dishes that they like so much here. As it was a quick lunch for us, it didn't take much time to order. For such thirsty us today, we started out with ordering our drinks, Coke for him, and Soya bean milk for me. They come in those classic tall glasses which, I rarely see in restaurants these days.
I did not feel like rice today and so I decided to go for mee. Classic noodles stir fired, with a little gravy in it. And so here my Hainan Fried Mee. Lots of veges, and prawns and chicken. Prawns went straight to my partner's plate cos I don't eat them. The taste of the mee was very similar to my fried noodles. Hmm, Cool. It is very simple but yet tasteful. This is the favourite. Hainan Fried Rice - with fried egg topping the rice. I like they way they fry this rice. And garnishing it with some lettuce, fried shallots, red chilis and fried egg. The dish may be simple but certainly not boring, with all those colourful garnishing. What's more important, it that it is delicious and yummy any time!

No wonder my guy never order anything else when we come here... You know, when you go to the same place many times, but you keep ordering the same dish - it really shows that the chef really maintains his or her cooking quality and, that is what customers love them for! The menu is just so extensive - covering various types of food from Malaysian, Thai, Chinese, and Western - I just don't know what to order! And looking at other diners, and what they eat - everything just looks so interesting and delicious. Perhaps next time I'm there, I'll try one of the Malaysian dishes. The prices are moderately on the cheaper side, and it is very nice to go with more people to enjoy more meals when sharing..

One thing I would like different, is that I wish they serve some condiments alongwith the our dishes - some cut chili in soy sauce and sambal.. That would then be a real 'kick' for me! :-)

Oreo's & April Fool's Day

Happy April Fool's Day!

This post is dedicated to the relationship between food, and April Fool's day. :-)

What was the worst trick played on you? Seriously, you must have gone thru that April 1st with a twist, right? I'd like to share with you my favourite one. It was something my friends did to me and I will never ever ever forget it. I can't. One of them turned out to be the beloved man of my life now(back then... just friends.... never dream of him becoming my boyfriend, puke puke pukeeee). He is sure to remind me of this story each & many many years to come.

Many, many years ago...

2 of my good friends called me up in the early morning, saying that they wanted to just see me at my house. They were on the way to college. So I said, sure, why not... So they came, it was Rav and Shad. So I got out and went over to their car. Everything seemed normal...

They were talking and eating. And so offered me some. So while talking, I took a piece of that Oreo's cookie. You know, those dark crispy biscuit with white cream in... so sweet and yummy... I sensed something was up, but did not know what. Until i took a bite of that cookie...

It tasted of Colgate!!! Yup. Colgate the toothpaste in between that dark chocolate biscuit. Oh my, I had just been April-fooled by this two unbelievable kids!!! Arrgh! I am soo gonna get back to them!

I was a bit embarrassed, but I knew it was just a joke.. and I was cool about it... I did suspect something funny about the cookie - but really - can u see the difference between the white cream and Colgate? Impossible... Hmm, they sure got me there...

And for that, I did get a whole new piece of cookie to enjoy. Sure did not had to brush my teeth that day... (Just kidding!!!)

Now Rav is happily married and residing in Melbourne, and I do miss her company... Shad got me as his sweet girlfriend cos he paid for that Colgate in Oreo's idea. Hehe... Just kidding. We haven't had Oreo's in quite a while...

I really can't believe they actually bought Colgate to April Fool me! I managed to fool them as well on that day - but I really can't remember what it was... :-)
